Thomas Keller, chef/proprietor of The French Laundry in the Napa Valley, is a purist and a man obsessed with getting the best that can be had in the food world. His methods are simple and exact. Tonight, from The French Laundry cookbook, we will prepare his food in his methodical step-by-step approach. First, three bites or amuse bouches: lobster consommé en gelee, pickled oysters with English cucumber capellini, and poached shrimp with avocado salsa. Then, roasted guinea fowl en crepinette de byaldi (wrapped with vegetable stew) with pan jus. We will finish with a cream of walnut and pear soup.
